Traditional and Mechanical Methods
Kokonte is a popular staple food in Ghana, and its flour is a crucial ingredient in many
households. The production of kokonte flour can be done through two methods: the traditional
way and the mechanical way. Next we will discuss the kokonte flour processing line using both
methods.
Traditional Method of Kokonte Flour Processing Line
The traditional method of processing kokonte flour involves processing cassava by hand. The
process includes six parts: washing, peeling, soaking, drying, and milling. Firstly, the raw cassava
tubers are washed and peeled. Then, the cleaned cassava tubers are soaked for hours to enhance
the taste. After soaking, the cassava tubers are dried and milled to produce the final kokonte flour.
Mechanical Method of Kokonte Flour Processing Line
The mechanical method of processing kokonte flour is more efficient and popular among
Ghanaians. The process involves three parts: cleaning, processing, and drying.

In the cleaning part, a dry sieve, a paddle washing machine, and a cassava peeler are used to
remove impurities, thoroughly wash the cassava, and peel the two layers of cassava tubers that are
poisonous and can affect the taste of the kokonte flour due to their high fiber content.
The processing part is the most crucial section of processing kokonte flour. It involves
several machines, including a cutting machine, a rasper, and a filter press. The cutting machine
and the rasper grind the cleaned and peeled cassava into slurry. After grinding, the slurry is
fermented in a tank to enhance the taste. The fermented cassava slurry is then pumped into a filter
press for dehydration.
In the drying part, the dehydrated kokonte flour is dried under hot airflow in a flash dryer.
Jinrui’s dryer for kokonte flour adopts a negative pressure principle to improve the drying effect.
The dried kokonte flour is further sieved by a sifter sieve to ensure the quality of the final product.
Finally, a packing machine is used to pack the kokonte flour for sale.
