Scallop Carpaccio with Vanilla Sauce
Ingredients: 10 scallops; 1 vanilla bean; 5
tablespoons of olive oil; Juice of 1/2 lemon; 1
tablespoon of grated parmesan cheese; 4 spring
onions or chives for serving
Preparation: To prepare the vanilla sauce, open
the vanilla bean and remove the seeds. Put olive
oil and the vanilla pod in a pan with a lid. Leave
it in a dark place for a day to infuse. Wash and
dry the scallops. Put them in a freezer for 20
minutes. Cut into thin slices
Serving: Take 2 rectangular sushi plates and lay
out 5 cooked scallops in a row on each. Pour the
vanilla sauce and lemon juice over them.
Sprinkle the dish with grated parmesan cheese.
Criss-cross the spring onion atop the dish.

Pear in Chocolate
Ingredients: 3.5oz (100g) of dark chocolate
1 pear
2 .oz (60ml) of dry wine
1.5 .oz (40ml) of sweet wine
2 tablespoons of milk
2oz (50g) of sugar
cinnamon, star anise, and cloves to taste
Preparation: Mix wine with spices and sugar and
bring it to a boil. Slice the pear and remove the
seeds. Add the pear slices to the wine. Simmer over
very low heat for 40 minutes. Melt the chocolate
over low heat in the milk.
Serving: Pour a layer of melted chocolate on the
bottom of the dish. Top it with pears and add more
melted chocolate. Make small chocolate droplets
from chocolate sauce around the pear.

chemistry of foods, both local and foreign, for
