Food Allergy Facts:
ā€¢ Food allergies among children
increased approximately 50% between
1997 and 2011.
ā€¢ The economic cost of childrenā€™s food
allergies is nearly $25 billion per year.
ā€¢ Allergies to peanuts, tree nuts, fish or
shellfish are generally lifelong allergies.
ā€¢ Cowā€™s milk, egg and soy allergies
typically begin in childhood and
eventually may be outgrown.
Food Allergy Basics
ā€¢ A food allergy is an abnormal
response by the immune
system to a food protein.
ā€¢ When the food is eaten, the
immune system releases
histamine and other
chemicals to ā€œattackā€ the food.
ā€¢ This results in the symptoms
of a food-allergic reaction.
Food Intolerances

food allergy?

hours after the food is eaten

ā€¢ Elimination Diet
Food-allergic reactions occur within
what time period after ingestion?
Reactions can happen in minutes, days or hours,
depending on the severity of the allergy.
Symptoms of Food Allergies
What is Anaphylaxis?
ā€¢ Serious allergic reaction
ā€¢ Rapid in onset
ā€¢ Can cause death
ā€¢ Requires immediate medical treatment
ā€¢ Involves multiple systems in the body.
Epinephrine
ā€¢ Epinephrine is the only medication that can
reverse the symptoms of anaphylaxis.
ā€¢ Antihistamines should not be used to treat
anaphylaxis, but can be used for localized
reactions, such as hives.
ā€¢ Prompt administration of epinephrine is
critical
ā€¢ Epinephrine is prescribed as an auto-
injector devise
ā€¢ Epinephrine is a safe drug, with the risks of
anaphylaxis outweighing any risks of
administering the medication
How a Child Might Describe a
Reaction
ā€¢ ā€œThis foodā€™s too spicy.ā€
ā€¢ ā€œMy tongue is hot.ā€
ā€¢ ā€œIt feels like somethingā€™s poking
my tongue.ā€
ā€¢ ā€œIt (my tongue) feels like there is
hair on it.ā€
ā€¢ ā€œThereā€™s a frog in my throat.ā€
ā€¢ ā€œ It feels like there are bugs in
there.ā€ (to describe itchy ears)
Major Food Allergies
Wheat Allergy
ā€¢ Wheat allergy is most common in
children, and is usually outgrown
before reaching adulthood, often by
age three.
ā€¢ Look for alternate grains such as
amaranth, barley, corn, oat, quinoa,
rice, rye, and tapioca.
ā€¢ Wheat has been found in some brands
of ice cream, marinara sauce, play
dough, potato chips, rice cakes, turkey
patties and hot dogs.
Peanut
ā€¢ One of the most common food
allergies.
ā€¢ About 25-40% of people who have
peanut allergy also are allergic to tree
nuts.
ā€¢ Peanuts and tree nuts often come into
contact with one another during
manufacturing and serving processes.
ā€¢ Peanut allergies tripled from 1997-
2008. 20-25% of those children do
outgrow it.

Tiny Little Peanuts Can Trigger
ā€¢ 1/250 of a peanut is enough to trigger a reaction (cutting
a peanut in half 125 times!)
ā€¢ High cross-reactivity to tree nuts (almonds, walnuts, etc.)
ā€¢ Peanut or tree nut allergies and asthma appear to
increase the risk for fatal reactions. Estimated that at
least Ā½ of deaths are result of peanut/tree nut
ā€¢ Reaction may occur in minutes OR hours ā€“ so itā€™s not just
a lunch-room event.
Tree Nut
ā€¢ Tree nuts include, but are not limited to,
walnut, almond, hazelnut, cashew,
pistachio, and Brazil nuts.
ā€¢ These are not to be confused or grouped
together with peanut, which is a legume, or
seeds, such as sunflower or sesame.
ā€¢ Tree nut proteins may be found in cereals,
crackers, cookies, candy, chocolates,
energy bars, frozen desserts, marinades
and barbeque sauces.
Milk
ā€¢ Most common food allergy in infants
and young children.
ā€¢ Nearly all infants who develop an
allergy to milk do so in their first year
of life. Most children eventually
outgrow a milk allergy.
ā€¢ Individuals who are allergic to cowā€™s
milk are often advised to also avoid
milk from other domestic animals like
goats.
Milk might be found:
ā€¢ Deli meat slicers
ā€¢ Some brands of canned tuna fish
ā€¢ Many non-dairy products
ā€¢ Some specialty products made
with milk substitutes are
manufactured on equipment
shared with milk
ā€¢ Some processed meats
Egg
ā€¢ One of the most
common food
allergies in children.
ā€¢ Sometimes found in:
baked goods, egg
substitutes, lecithin,
macaroni, marzipan,
marshmallows,
nougat and pasta.
Soy
ā€¢ Allergy to soy generally occurs early in childhood and
often is outgrown by age 3.
ā€¢ People with a soy allergy are not necessarily allergic to
other legumes.
ā€¢ Soybeans and soy products are found in many foods:
baked goods, canned tuna and meat, cereals, cookies,
crackers, high-protein energy bars and snacks, infant
formulas, low-fat peanut butter, processed meats,
sauces, and canned broths and soups.
Fish and Shellfish
ā€¢ Finned fish and shellfish do not come from related
families of foods, so being allergic to one does not
necessarily mean that you must avoid both.
Other Allergies
ā€¢ A person can be allergic to virtually any food.
ā€¢ Allergic reactions have been reported to:
ā€¢ Corn
ā€¢ Gelatin
ā€¢ Meat (beef, chicken, mutton, and pork)
ā€¢ Seeds (sesame, sunflower, and poppy being the most
common)
ā€¢ Spices (caraway, coriander, garlic, mustard, etc.)
ā€¢ Other common causes of severe reactions include:
ā€¢ Medications
ā€¢ Latex
ā€¢ Insect Stings

Food Allergy Facts: ā€¢ Food allergies among children increased approximately 50% between 1997 and 2011. ā€¢ The economic cost of childrenā€™s food allergies is nearly $25 billion per year. ā€¢ Allergies to peanuts, tree nuts, fish or shellfish are generally lifelong allergies. ā€¢ Cowā€™s milk, egg and soy allergies typically begin in childhood and eventually may be outgrown.

How a Child Might Describe a Reaction ā€¢ ā€œThis foodā€™s too spicy.ā€ ā€¢ ā€œMy tongue is hot.ā€ ā€¢ ā€œIt feels like somethingā€™s poking my tongue.ā€ ā€¢ ā€œIt (my tongue) feels like there is hair on it.ā€ ā€¢ ā€œThereā€™s a frog in my throat.ā€ ā€¢ ā€œ It feels like there are bugs in there.ā€ (to describe itchy ears)

Wheat Allergy ā€¢ Wheat allergy is most common in children, and is usually outgrown before reaching adulthood, often by age three. ā€¢ Look for alternate grains such as amaranth, barley, corn, oat, quinoa, rice, rye, and tapioca. ā€¢ Wheat has been found in some brands of ice cream, marinara sauce, play dough, potato chips, rice cakes, turkey patties and hot dogs.

Peanut ā€¢ One of the most common food allergies. ā€¢ About 25-40% of people who have peanut allergy also are allergic to tree nuts. ā€¢ Peanuts and tree nuts often come into contact with one another during manufacturing and serving processes. ā€¢ Peanut allergies tripled from 1997- 2008. 20-25% of those children do outgrow it.

Estimated that at least Ā½ of deaths are result of peanut/tree nut ā€¢ Reaction may occur in minutes OR hours ā€“ so itā€™s not just a lunch-room event.

Tree Nut ā€¢ Tree nuts include, but are not limited to, walnut, almond, hazelnut, cashew, pistachio, and Brazil nuts. ā€¢ These are not to be confused or grouped together with peanut, which is a legume, or seeds, such as sunflower or sesame. ā€¢ Tree nut proteins may be found in cereals, crackers, cookies, candy, chocolates, energy bars, frozen desserts, marinades and barbeque sauces.

Most children eventually outgrow a milk allergy. ā€¢ Individuals who are allergic to cowā€™s milk are often advised to also avoid milk from other domestic animals like goats.

Soy ā€¢ Allergy to soy generally occurs early in childhood and often is outgrown by age 3. ā€¢ People with a soy allergy are not necessarily allergic to other legumes. ā€¢ Soybeans and soy products are found in many foods: baked goods, canned tuna and meat, cereals, cookies, crackers, high-protein energy bars and snacks, infant formulas, low-fat peanut butter, processed meats, sauces, and canned broths and soups.
