2. Giouler’s plate.
Fresh fish from Rhodes, straight from the Aegean Sea
Ingredients:
-1 Kilo of fresh fish
-olive oil
-a little flour
Instructions:
We heat the oil, we roll the fish in the flour and we fry them οn both sides. When they are ready, we serve with Greek salad and homemade bread.
3. Matina’s plate
Greek salad
Ingredients
Tomatoes, cucumber, lettuce
Olives and feta cheese
Olive oil and salt
Instructions
Cut the tomatoes, cucumber and lettuce in pieces.
Add the olive oil and some salt.
Mix in a bowl.
You have a full, healthy and tasty meal!
4. Flora’s plate
String beans with pumpkin
Flora’s recipe comes from a village of Rhodes. It’s a traditional recipe. These beans have fibers, lots of proteins and vitamins and very few calories. They are good for metabolism, brain cells, memory and cognitive abilities. The red pumpkin also contains lots of healthy substances. It is good for the intestine, high cholesterol, the stomach, and the heart.
Ingredients:
String beans
Red pumpkin in slices
Salt- pepper
Olive oil
Instructions:
After leaving the beans in water, we boil them. Then, we put them on a baking tray with the pumpkin and we sprinkle salt and pepper. We repeat the procedure and on top we pour olive oil. We roast in the oven for about 20 minutes.
5. Anastasia’s plate
Are you hungry? Come to Rhodes and try Greek moussaka.
Ingredients:
2 Kilos of aubergines
13 cup of olive oil
12 cup grated onion
2 cloves of chopped garlic
750 gr of beef minced meat
3 cups of fresh ripe tomatoes salt, pepper
3 cups of cooking cream (béchamel)
1 cup of grated yellow cheese
Instructions:
We fry a little bit the aubergines. In a pot we fry the onion, the garlic and the minced meat, stirring all the time. We add the tomato, the salt and pepper and we boil until the sauce thickens. We spread half the aubergines in a baking tray and we put half the mixture on top. We repeat the procedure with the other half and on top we spread the béchamel cream and the cheese. We roast in the oven for 35-40 until it roasts well.
Enjoy it with Greek salad!
6. Filimona’s plate
Spinach pie
Ingredients
- 500 grams of flour
- 1 spoonful of salt
- 2 spoonfuls of olive oil
- 1spoonful of vinegar
- 2 onions
- 500 grams of spinach
Instructions
-We spread the dough into thin sheets
-We fry the onions and the spinach
-We put 5 sheets one on top of the other
- We spread the mixture of spinach, onions and some cheese if we want to
- We put five more sheets of dough on top
- We spread olive oil on top
- We leave it in the oven for one hour.
7. Michael’s plate
It’s worth trying a tasty recipe from Romania:
Mamaliga (Polenta)
Ingredients:
500 ml of water
50 grams of corn flour
A little salt, a little oil
(If you want) a clove of garlic
Instructions:
We boil the water, the garlic, the salt and the oil for 3 minutes. We turn the switch off and we let it boil.We add the corn flour, stirring all the time for 2 minutes.We let the mixture boil until it rises. You can eat it with sausages and fat meat. For something lighter you can eat it with yoghurt, feta cheese and different kinds of cheese.

8. Maria-Anastasia’s plate
Stuffed vine leaves
Ingredients
Vine leaves
Rice
Minced meat
Onion
Tomato
Salt and pepper
Olive oil
Instructions
First we boil the leaves and we let them cool. Then in a bowl we put grated onion, grated tomato, the minced meat, salt and pepper, the oil and we mix.
After that, we put a little filling on each leaf and we roll. We put then in a saucepan and we boil for one hour at low temperature. We place a plate on top, so that they won’t burst. We serve with yoghurt.
9. Antoni’s plate
Souvlaki with pita
When you come to Rhodes, you must eat souvlaki
with chips and tzatziki salad.
Ingredients
Pork meat (or chicken or lamb)
1 pot of yoghurt
2 cloves of garlic
1cucumber
Salt and pepper
A little olive oil
2 or 3 potatoes
Instructions
Put the yoghurt in a bowl, chop the cucumber and the garlic and mix. Add a little olive oil, salt and pepper. Grill the meat well. Fry the chips. Grill the pita a little bit on both sides. Put the meat, the chips and the tzatziki in the pita and roll!
Your souvlaki is ready!!!
10. Maria-Nefeli’s plate
Octopus with olive oil and oregano
If you are hungry in Rhodes and you want some sea food,
eat octopus in vinegar.
Ingredients
1 kg of octopus
1 onion, 1 carrot
Vinegar, red wine
Some pepper, salt, oregano
Olive oil
Instructions
We put in a pot the octopus, the vinegar, the onion, the carrot, the salt and pepper. Then we boil them, first at high temperature and then at low, for 45-60 minutes.
We let it cool and then we chop it. We serve with olive oil and oregano.
11. Maria’s plate
Do you feel run down? You should try Maria’s fish soup! It will make you strong and give you good sight.
Ingredients
1-2 big fish
3-4 courgettes, 1 onion, 2 potatoes, 3 carrots, a little celery
1,5 litters of water, ½ cup of rice ,oil , salt and mayonnaise.
Instructions
We boil the vegetables until they are soft. And we put them on a plate. In the same water we boil the fish for 10 -12 minutes, adding the oil. When they are ready, we take them out of the saucepan and we strain the water. Then, we boil in it the rice for 10 minutes. We serve the fish and vegetables with the mayonnaise, the most delicious of all!
12. Nike’s plate
Stuffed cabbage leaves
When you’re hungry and you want something delicious, eat Nike’s dish:
Ingredients:
1 kg of minced meat (veal)
1 kg of minced meat (pork)
1 cup of olive,
1 cup of rice
1 big onion
1 chopped tomato
Salt, pepper, a little chopped parsley
1 big, soft cabbage
Instructions
First, we separate the cabbage leaves. We boil them until they get soft and we cut them in big pieces. In a bowl we mix the minced meat, the rice, the olive oil, the tomato, the onion, the parsley and the spices and we plough all together. Then, we roll the filling in the leaves and we put them in a big saucepan. We put a plate above them so that they won’t melt, we add two glasses of water and we boil for half an hour. We serve with egg-lemon sauce or Yoghurt.
13. Vito’s plate
Lasagna Bolognese
When you go to Italy it’s worth trying a fine Italian recipe.
Ingredients:
50 grams of grated yellow cheese, Salt, pepper
Ingredients for the lasagna:
300 grams of flour, 3 eggs, Salt
Ingredients for the mince:
Chopped celery 3, chopped onion,Rosemary, bay leaves, thyme, oregano, leek, carrot Salt Pepper, 2 spoonfuls, of olive oil , 300 grams of minced meat (veal), 5 peeled and chopped tomatoes, 2 cloves of chopped garlic, half a cup of white wine,
Ingredients for the sauce:
Meat broth (300 ml), 30 grams of flour, 30 grams of butter, salt, pepper, grated nutmeg (1/2 spoonful)
Instructions:
1. We mix the flour with the salt and we add the eggs and water to make the dough. We put it in the fridge for one hour. Then we spread the dough in thin sheets and we cut it in rectangular pieces.
2. In a saucepan, we heat the oil and we fly the minced meat. We add the onion, the celery and the garlic. We also add the wine, the tomatoes, the herbs and spices, salt, pepper and we boil for half an hour.
3. In another pot we heat the broth. We melt the butter and we add the flour. We boil for 10 minutes. Then we add salt, pepper and nutmeg.
4. We spread butter on a baking tray and we add the mixtures in a row, repeating the procedure. We sprinkle the cheese on top.
5. We roast at 250 degrees for 30 minutes.
14. Georgia’s plate
A special cake (Fanouropita)
Whenever you lose something (e.g. your Keys, your glasses, etc) and you can’t find them, you make this cake in honor of Saint Fanourios, so that he will help you find them.
Ingredients:
1 glass of olive oil
1 glass of sugar
1 glass of orange juice
1 packet of flour
1 spoonful of cinnamon
1 spoonful of nutmeg
Some sesame.
Instructions:
Beat the oil, the sugar and the orange juice in a bowl until the sugar melts. Then, add the cinnamon, the nutmeg and the flour. Put the above mixture in a baking tray and sprinkle some sesame on top.
Bake at 180oC for 40-45 minutes.
15. Mateo’s plate
Halvah Sweet
Ingredients:
Semolina
Butter
Sugar
Salt
Water
Instructions:
We fry the semolina in a frying pan and we stir until it gets brown. Then, we add the butter, we stir well and we add the water. We add sugar and salt and we put it in the oven until it’s ready.
16. Faidra’s plate
ΜΠΑΚΛΑΒΑΣ (Baklava)
Do you feel bitter? Eat Fedra’s baklava and sweeten!
Ingredients:
For the thin pastry sheets we need:
1 kg of flour,
3 eggs
A little salt
A little sugar
Half a cup of seed- oil.
For the filling we need:
1 kg of graded walnuts
4 spoonfuls of cinnamon
4 spoonfuls of sugar
1 kg of fresh butter.
Instructions:
To make the pastry for the sheets:
Beat the eggs in a bowl, then add the flour, the oil, the salt and the sugar. We mix all these until we get a soft pastry.
We cut the pastry in small balls and we open it into sheets. We spread 5 sheets, then we add the filling and again, until we finish all the sheets and the filling.
Then we bake at low temperature, at 150oC.
For the syrup we need:
2 litres of water
2 kilos of sugar
Some lemon skin.
We pour the syrup over the baklava when the syrup is cool.
We serve when it’s cold

17. Angel’s plate
Greek doughnuts
If you come to Rhodes, you must try Greek doughnuts.
Ingredients:
-600 gr of soft flour
-water
-yeast
-sugar
-salt
-oil
For the syrup we need:
-1 cup of honey
-water
-1 cup of sugar
-lemon juice
-cinnamon and walnuts
Instructions:
-We mix the flour with the yeast and the salt, adding warm water as we knead with our fingers. We leave it somewhere hot and covered until it rises at double size.
-We heat the oil in a saucepan and we throw in little pieces of the dough and we let them fry until they get yellow.
-We make the syrup by boiling one cup of water with the sugar and the honey and we pour it all over the doughnuts.
-We put the cinnamon and walnuts on top and we can serve with ice-cream or chocolate syrup.
