Beer is an alcoholic beverage
produced by the saccharification
of starch and fermentation of the
resulting sugar.
4. Types of beer……
Generally three types of beer
are sold,
1) Regular beer
2) Light beer and
3) non-alcoholic.
5. Percentage Of alcohol In Various Beer?
The term light intends to signify a product with less alcohol and fewer calories than
regular beer. About 2-3 percent of beer sales are now of the light type. Non-alcoholic
beer usually claims less than a half percent of alcohol and is intended for people who
desire a product with little or no alcohol.

Four raw materials are required for beer production,
1) BARLEY
2) HOPS
3) WATER

Is the main RM for beer production
High starch content & the husk still adheres to the grain
Before use barley must be converted into malt
Un-malted cereals ; maize, rice, sorghum, barley & wheat or product made form them are often
used as adjuncts
9. Hops…
Hops are the female flowers of the hop plant (humulus lupulus).
Give beer its bitter taste & an effect on the aroma.
They are used primarily as a flavoring and stability agent in beer, to which they
impart a bitter, tangy flavor.
Hops also act like preservative on beer production.
The stem is hexagonal in cross-section with 6 rows of hairs on the 6 ridged corners
helping the hop cling to the support
As the hop grows, lateral shoots (‘laterals’) develop from the buds in the axils of
the leaves and the main stem.
10. They are also used for various purposes in other beverages and herbal
medicine.
Hops are usually dried in an oast house before they are used in the
brewing process.
11. Water…
Finished beer is more than 90% water.
The amount and composition of dissolved minerals, such as calcium and
magnesium, play a large part the taste of the beer.
Brewing water must therefore, be clean, healthy, and of the right composition.
Water is also required for general utility purposes such as cleaning in order to
maintain the necessary hygienic conditions within the process.
Water is also used to pack lines and tanks thereby excluding oxygen.
12. Yeast…
Yeast is the most important
ingredient in beer brewing.
Yeast is a living creature,
metabolizing, reproducing, and living
off the ingredients in the beer.
Yeast is the microorganism that is
responsible for fermentation in beer.
13. Use of beer…
It refreshes and relaxes, it fuels sociability and cools the burn of spicy food. It is the most-widely
consumed alcoholic beverage in the world, and the third most common beverage overall.
